I am going to be replacing some parts on the audio PCB. And I cant find the voltage for the ceramic caps as in C605 and the such. And can they be replaced with a MLCC type device?
No problems just getting rid of old parts.

Carbon-composition resistors and electrolytic caps are the main failure risks on that board. The ceramic-disc caps rarely fail.
Most of the original ceramic discs on that board are rated for either 500V or 1kV.
MLCC parts should be okay. Pretty sure the parts that block DC and 'carry' the audio between stages should be NPO types, I think. Mainly for minimum dissipation factor. The caps that serve to bypass RF to ground like C607 and C641 can probably be nearly anything that's close and still do the job.
